Description

A delightful cheesecake blending rich creaminess with unique pistachio flavor, perfect for special occasions or a tasty treat.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup chopped pistachios
  • Green food coloring (optional)

Instructions

  1. Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the bottom of the pan to form a crust.
  3. In a large mixing bowl, beat softened cream cheese and 1 cup of sugar until smooth and creamy.
  4. Mix in vanilla extract and add eggs one by one, beating well after each addition.
  5. Gently stir in sour cream and chopped pistachios. Add green food coloring if desired.
  6. Pour the cream cheese mixture over the crust in the springform pan and bake for 55-60 minutes until set but slightly jiggly in the center.
  7. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  8. Transfer to the fridge and chill for at least 4 hours or overnight before serving.

Notes

Make sure cream cheese and eggs are at room temperature. Consider using a water bath for creamier texture.
