- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 4 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup chopped pistachios
- Green food coloring (optional)
Instructions
- Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press firmly into the bottom of the pan to form a crust.
- In a large mixing bowl, beat softened cream cheese and 1 cup of sugar until smooth and creamy.
- Mix in vanilla extract and add eggs one by one, beating well after each addition.
- Gently stir in sour cream and chopped pistachios. Add green food coloring if desired.
- Pour the cream cheese mixture over the crust in the springform pan and bake for 55-60 minutes until set but slightly jiggly in the center.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
- Transfer to the fridge and chill for at least 4 hours or overnight before serving.
Notes
Make sure cream cheese and eggs are at room temperature. Consider using a water bath for creamier texture.
