Instructions
- Preheat the oven to 325°F (160°C). Grease a 9×9-inch baking pan to prevent sticking.
- Prepare the crust. In a bowl, mix together the crushed graham crackers and melted butter. Press this mixture into the bottom of the prepared baking pan to form a solid base.
- Make the cheesecake filling. In a large bowl, beat the softened cream cheese and granulated sugar together until it becomes smooth.
- Add eggs one at a time, mixing well after each addition.
- Mix in the vanilla extract, sour cream, and finely chopped pistachios.
- Bake the cheesecake mixture over the crust and spread it evenly. Bake for 30-35 minutes or until the center is set.
- Cool at room temperature, then refrigerate for at least 4 hours.
- Serve topped with whipped cream and garnished with extra pistachios.
