Description

Crunchy, nutty biscotti with a hint of cannoli style, featuring ricotta and pistachios.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup ricotta cheese
  • 1/2 cup pistachios, chopped
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, cream together butter and sugar, then add eggs, vanilla, and ricotta.
  4. Gradually add dry ingredients to the wet mixture until combined.
  5. Stir in pistachios and chocolate chips.
  6. Shape the dough into a log about 2 inches wide and place it on a lined baking sheet.
  7. Bake for 25-30 minutes or until golden.
  8. Let cool, then slice into biscotti pieces.
  9. Bake again for 10-15 minutes, turning halfway, until crisp. Cool completely before serving.

Notes

Use room temperature butter and eggs for smoother dough. Chill dough for 15 minutes if too sticky.
