- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup ricotta cheese
- 1/2 cup pistachios, chopped
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, cream together butter and sugar, then add eggs, vanilla, and ricotta.
- Gradually add dry ingredients to the wet mixture until combined.
- Stir in pistachios and chocolate chips.
- Shape the dough into a log about 2 inches wide and place it on a lined baking sheet.
- Bake for 25-30 minutes or until golden.
- Let cool, then slice into biscotti pieces.
- Bake again for 10-15 minutes, turning halfway, until crisp. Cool completely before serving.
Notes
Use room temperature butter and eggs for smoother dough. Chill dough for 15 minutes if too sticky.
