A sweet and savory Pineapple Rice recipe that combines jasmine rice and crushed pineapple for a unique, refreshing flavor.

- 1 Cup jasmine rice (not instant)
- 1½ Cups water
- 1 Tablespoon unsalted butter
- 1 (8 ounce) can crushed pineapple in juice (don’t drain)
- ½ Teaspoon Kosher Salt
- 1 Tablespoons granulated sugar
- 1½ Tablespoon fresh lime juice
- 2 Tablespoons green onion (chopped)
Instructions
- Combine jasmine rice, water, butter, crushed pineapple, salt, and sugar in a medium saucepan. Stir until well combined.
- Heat on medium-high until boiling. Reduce heat to a simmer and cover. Cook for 15-20 minutes or until rice is cooked.
- Remove saucepan from heat and squeeze fresh lime juice over the top. Stir in with a fork to fluff up the rice.
- Serve while hot and garnish with fresh chopped green onions.
Notes
Don’t overcook the rice and use fresh ingredients for the best flavor. You can also adjust the sweetness to your preference.
