  • 4 kiwifruit
  • 8–10 fresh mint leaves
  • 2 limes
  • 2 tablespoons honey

Instructions

  1. Start by toasting the shredded coconut. Place it in a dry skillet over medium heat. Stir frequently until golden, which should take about 2–3 minutes. Be careful not to burn it.
  2. Peel and cut the pineapple into bite-sized chunks. Remove any brown spots and ensure they are ready for mixing.
  3. Prepare the kiwifruit by peeling and cutting them into halves or wedges. Their bright green color will beautifully contrast with the yellow pineapple.
  4. Chop the fresh mint leaves finely. The mint will add a refreshing flavor to your salad.
  5. Zest one lime, then juice both limes into a bowl. This will be the base for your dressing.
  6. In another bowl, whisk together the lime juice, lime zest, and honey until smooth and well combined.
  7. Take a large bowl and add the pineapple chunks, kiwis, and chopped mint.
