Description

This easy Pineapple Juice Cake gives you a soft, buttery cake with a bright tropical glaze, perfect for any occasion.


Ingredients

  • 1 box (15.25 oz) Yellow cake mix
  • 1 cup Pineapple juice (divided, ¾ cup for batter, ¼ cup for glaze)
  • 4 large Eggs (room temperature)
  • ¾ cup Vegetable oil
  • 2 cups Powdered sugar
  • ½ cup Unsalted butter (1 stick)
  • 1 teaspoon Vanilla extract (optional)
  • Pineapple rings & cherries (optional garnishes)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a bundt pan thoroughly.
  2. In a large mixing bowl, combine the cake mix, ¾ cup pineapple juice, eggs, and oil. Mix until smooth.
  3. Pour the batter into the prepared pan and bake for 35 to 40 minutes until golden and a toothpick comes out clean.
  4. In a small saucepan, melt the butter. Stir in ¼ cup pineapple juice and powdered sugar. Whisk until smooth.
  5. Let the cake cool for 10 minutes, then invert onto a wire rack. Poke holes and pour the glaze over the warm cake.
  6. Allow the cake to cool completely before slicing and serving with optional garnishes.

Notes

For a lighter version, swap half the oil for unsweetened applesauce.
