- 1 pound chicken breast, cut into bite-sized cubes
- 1 cup pineapple chunks (fresh or canned, well drained)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon freshly grated ginger
- Salt and black pepper, to taste
- ¼ cup green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chicken cubes and cook until lightly golden and fully cooked. Remove the chicken and set aside.
- Add chopped onion, garlic, and red bell pepper to the skillet and cook until softened and fragrant.
- Stir in pineapple chunks and cook for about 2 minutes until heated and lightly caramelized.
- Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Stir once and bring to a gentle boil.
- Reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender and liquid is mostly absorbed.
- Return chicken to the skillet and gently stir to combine. Heat until warmed through.
- Garnish with sliced green onions and sesame seeds just before serving.
Notes
Avoid overcooking the chicken for tenderness. Fresh pineapple enhances flavor. Adjust seasoning before serving for best results.
