Ingredients

  • 1 pound chicken breast, cut into bite-sized cubes
  • 1 cup pineapple chunks (fresh or canned, well drained)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon freshly grated ginger
  • Salt and black pepper, to taste
  • ¼ cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chicken cubes and cook until lightly golden and fully cooked. Remove the chicken and set aside.
  2. Add chopped onion, garlic, and red bell pepper to the skillet and cook until softened and fragrant.
  3. Stir in pineapple chunks and cook for about 2 minutes until heated and lightly caramelized.
  4. Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Stir once and bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender and liquid is mostly absorbed.
  6. Return chicken to the skillet and gently stir to combine. Heat until warmed through.
  7. Garnish with sliced green onions and sesame seeds just before serving.

Notes

Avoid overcooking the chicken for tenderness. Fresh pineapple enhances flavor. Adjust seasoning before serving for best results.
