Ingredients

  • 1 pound chicken breast (cut into bite-sized pieces)
  • 2 tablespoons olive or sesame oil
  • 2 cloves garlic (minced)
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon cornstarch (mixed with 1 tablespoon water)
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 red bell pepper (diced)
  • 1/4 cup green onions (chopped)
  • Sesame seeds (optional, for garnish)
  • Crushed red pepper (optional, for heat)

Instructions

  1. Heat oil in a 12-inch skillet over medium heat until shimmering.
  2. Add chicken pieces and cook for 6-8 minutes until golden brown and cooked through. Transfer to a plate.
  3. In the same pan, sauté minced garlic for about 30 seconds until fragrant.
  4. Pour in soy sauce, pineapple juice, honey, and vinegar. Stir and bring to a gentle simmer for about 1 minute.
  5. Mix cornstarch with water in a small bowl and pour into the sauce while stirring. Cook for 2-3 minutes until the sauce thickens.
  6. Return cooked chicken, pineapple chunks, and diced bell pepper to the pan. Toss to coat and cook for an additional 2 minutes.
  7. Gently fold in cooked rice and stir until well combined and heated through for about 2 minutes.
  8. Remove from heat and garnish with chopped green onions and sesame seeds if desired. Serve immediately.

Notes

Use day-old rice for best results. Adjust sweetness or saltiness of the sauce to taste.
