- 2 teaspoons baking powder

- 2 large eggs
- 1/2 cup vegetable oil

- 1 1/2 cups pineapple tidbits or crushed pineapple, drained
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs. Stir in the vegetable oil and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Gently fold in the drained pineapple.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
Notes
For best results, do not overmix the batter and ensure the pineapple is well-drained.
