Ingredients

- 2 pounds of Yukon Gold or Russet potatoes
- 1 bulb of garlic
- 1/2 cup of milk or cream
- 1/4 cup of butter
- Salt to taste
- Pepper to taste
- Fresh chives or parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the top off the bulb of garlic, drizzle with a bit of olive oil, wrap in aluminum foil and roast for 30-35 minutes.
- Peel and cut the potatoes into even chunks. Cover with cold water in a large pot, add salt, and bring to a boil.
- Cook the potatoes for about 15-20 minutes until fork-tender, then drain and return to the pot.
- Squeeze the roasted garlic cloves into the potatoes, add butter and milk or cream.
- Mash the potatoes until smooth, being cautious not to over-mash.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh chives or parsley if desired.
Notes
For extra flavor, use chicken broth when boiling the potatoes. Avoid over-mashing to prevent gummy texture.
