Description

Creamy and flavorful roasted garlic mashed potatoes that provide comfort in every bite.


Ingredients

Scale
  • 2 pounds of Yukon Gold or Russet potatoes
  • 1 bulb of garlic
  • 1/2 cup of milk or cream
  • 1/4 cup of butter
  • Salt to taste
  • Pepper to taste
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the top off the bulb of garlic, drizzle with a bit of olive oil, wrap in aluminum foil and roast for 30-35 minutes.
  3. Peel and cut the potatoes into even chunks. Cover with cold water in a large pot, add salt, and bring to a boil.
  4. Cook the potatoes for about 15-20 minutes until fork-tender, then drain and return to the pot.
  5. Squeeze the roasted garlic cloves into the potatoes, add butter and milk or cream.
  6. Mash the potatoes until smooth, being cautious not to over-mash.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with fresh chives or parsley if desired.

Notes

For extra flavor, use chicken broth when boiling the potatoes. Avoid over-mashing to prevent gummy texture.
