Creamy roasted garlic mashed potatoes that are flavorful and comforting. Perfect as a side dish for any meal.
Ingredients

- 2 pounds of potatoes (Yukon Gold or Russet)
- 1 bulb of garlic
- 1/2 cup of milk (or cream for extra richness)
- 1/4 cup of butter
- Salt and pepper to taste
- Fresh chives or parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the top off the bulb of garlic, drizzle olive oil over it, and wrap in aluminum foil.
- Roast in the oven for about 30-35 minutes until the cloves are soft.
- Peel and cut the potatoes into even chunks, then place in a large pot and cover with cold water.
- Add a pinch of salt and bring to a boil.
- Cook the potatoes for about 15-20 minutes until fork-tender, then drain and return to the pot.
- Squeeze the roasted garlic cloves into the potatoes, then add the butter and milk (or cream).
- Mash the potatoes until smooth, being careful not to over-mash.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh chives or parsley if desired.
Notes
For extra flavor, use chicken broth instead of water when boiling the potatoes. Store leftovers in an airtight container for 3-5 days.
