Description

Ingredients

  • 4 cups mixed greens (spinach, arugula, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 bell pepper, diced (any color)
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Start by washing all your vegetables under cold water. Make sure they are clean and free from any dirt.
  2. In a large salad bowl, add the mixed greens as a base.
  3. Next, layer the cherry tomatoes, cucumber, bell pepper, and red onion on top of the greens.
  4. Sprinkle the crumbled feta cheese and sliced olives over the salad.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to create your dressing.
