Description

A hearty and flavorful dish combining pasta, vegetables, and protein, topped with melted cheese.


Ingredients

  • 2 cups cooked pasta (penne, fusilli, or spaghetti)
  • 1 cup diced vegetables (bell peppers, carrots, zucchini)
  • 1 cup cooked protein (chicken, beef, or tofu)
  • ½ cup shredded cheese (mozzarella or cheddar)
  • ½ cup marinara sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Chop up your chosen vegetables and protein while the pasta is cooking.
  2. In a large skillet, heat olive oil over medium heat. Add the diced vegetables and cook for about 5 minutes until tender.
  3. Add the cooked protein to the skillet, seasoning with garlic powder, Italian seasoning, salt, and pepper. Stir and cook for an additional 3 minutes.
  4. Drain the cooked pasta and add it to the skillet. Pour in the marinara sauce and toss everything together.
  5. Reduce heat to low, sprinkle shredded cheese over the top, and cover. Let sit for about 5 minutes until the cheese is melted and bubbly.
  6. Remove from heat, garnish with fresh parsley if desired, and serve hot.

Notes

To store leftovers, allow cooling before transferring to an airtight container for 3-4 days in the refrigerator or up to 2 months in the freezer.
