A savory twist on classic meatloaf, filled with veggies and provolone cheese, perfect for any family dinner.


Ingredients

  • 1½ lbs ground beef
  • 1 cup breadcrumbs
  • 1 large egg, beaten
  • ½ cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • 1 green bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 cup shredded provolone cheese
  • Extra provolone for topping
  • ¼ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp brown sugar

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet or loaf pan.
  2. Heat olive oil in a skillet over medium heat and sauté sliced bell pepper and onion for 5–7 minutes until softened.
  3. In a large bowl, combine ground beef, breadcrumbs, beaten egg, milk, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently.
  4. Flatten the meat mixture into a rectangle, spread the sautéed vegetables and cheese on top, and roll it into a log.
  5. Mix ketchup, Worcestershire sauce, and brown sugar for the glaze and brush it over the meatloaf.
  6. Bake for 45–50 minutes until the internal temperature reaches 160°F (71°C) and add extra cheese in the last 5 minutes.
  7. Let the meatloaf rest for 10 minutes before slicing and serving.

Ensure the vegetables cool slightly before mixing with the meat to maintain the right texture.
