- 1½ lbs ground beef
- 1 cup breadcrumbs
- 1 large egg, beaten
- ½ cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 1 green bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 cup shredded provolone cheese
- Extra provolone for topping
- ¼ cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp brown sugar
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking sheet or loaf pan.
- Heat olive oil in a skillet over medium heat and sauté sliced bell pepper and onion for 5–7 minutes until softened.
- In a large bowl, combine ground beef, breadcrumbs, beaten egg, milk, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently.
- Flatten the meat mixture into a rectangle, spread the sautéed vegetables and cheese on top, and roll it into a log.
- Mix ketchup, Worcestershire sauce, and brown sugar for the glaze and brush it over the meatloaf.
- Bake for 45–50 minutes until the internal temperature reaches 160°F (71°C) and add extra cheese in the last 5 minutes.
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Ensure the vegetables cool slightly before mixing with the meat to maintain the right texture.
