Ingredients

  • 1 lb fresh salmon fillet, skin removed and diced
  • 1/4 cup basil pesto
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups fresh arugula, washed and dried
  • 1/2 cup red cabbage, thinly sliced
  • 1/4 cup carrots, grated
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced salmon, basil pesto, breadcrumbs, egg, lemon juice, garlic powder, salt, and pepper. Mix until just combined.
  2. Form the mixture into 4 equal patties, about 1 inch thick.
  3. Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
  4. Cook the salmon patties for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 145°F).
  5. While the burgers are cooking, prepare the arugula slaw by combining arugula, red cabbage, carrots, olive oil, apple cider vinegar, salt, and pepper in a bowl. Toss to combine.
  6. Once the burgers are cooked, remove them from the skillet and let them rest for a minute.
  7. Serve the salmon burgers on toasted buns topped with arugula slaw.
