- 1 lb fresh salmon fillet, skin removed and diced
- 1/4 cup basil pesto
- 1/4 cup breadcrumbs
- 1 large egg
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups fresh arugula, washed and dried
- 1/2 cup red cabbage, thinly sliced
- 1/4 cup carrots, grated
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced salmon, basil pesto, breadcrumbs, egg, lemon juice, garlic powder, salt, and pepper. Mix until just combined.
- Form the mixture into 4 equal patties, about 1 inch thick.
- Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
- Cook the salmon patties for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 145°F).
- While the burgers are cooking, prepare the arugula slaw by combining arugula, red cabbage, carrots, olive oil, apple cider vinegar, salt, and pepper in a bowl. Toss to combine.
- Once the burgers are cooked, remove them from the skillet and let them rest for a minute.
- Serve the salmon burgers on toasted buns topped with arugula slaw.
Notes
To enhance flavor, consider adding toppings like avocado or cheese. For a spicy kick, you can add jalapeños to the burger mix.
