- 2 boneless, skinless chicken breasts (about 1.5 pounds total)
- 1/4 cup prepared pesto
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large head of butter lettuce, leaves separated and washed
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons pine nuts, toasted (optional)
- 1 tablespoon balsamic glaze (optional)
Instructions
- Place each chicken breast between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
- In a bowl, whisk together pesto, olive oil, garlic powder, salt, and pepper. Add chicken, coat thoroughly, cover, and marinate for 30 minutes to 2 hours.
- Heat a skillet over medium-high heat; add olive oil.
- Cook marinated chicken for 5-7 minutes on each side until cooked through (165°F/74°C).
- Remove chicken from skillet and let rest for at least 5 minutes before slicing.
- Separate and wash lettuce leaves, then pat dry.
- Fill each lettuce cup with sliced chicken.
- Add toppings: cherry tomatoes, red onion, feta cheese, and pine nuts.
- Drizzle with balsamic glaze if desired.
- Serve immediately.
Notes
Store chicken, lettuce, and toppings separately for freshness. Do not overcook the chicken to avoid dryness.
