- 2 large boneless, skinless chicken breasts
- 1 cup fresh basil pesto
- 4 pieces of flatbread
- 1 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh basil leaves, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes on each side until golden and cooked through.
- Remove chicken, let it rest for 5 minutes, then slice into thin strips.
- Lay out flatbreads on a baking sheet and spread basil pesto over each.
- Distribute sliced chicken over the pesto, sprinkle with mozzarella, and add halved cherry tomatoes.
- Top with grated Parmesan cheese.
- Bake for 10-12 minutes until cheese is melted and bubbly.
- Optionally, broil for 1-2 minutes for a crispy top.
- Let cool, then slice and garnish with fresh basil if desired.

Serve warm with a side salad or dipping sauces like marinara or ranch.
