Description

Delicious and easy Pesto Chicken Flatbread combines chicken, basil pesto, and melted cheese, perfect for quick weeknight dinners.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh basil pesto
  • 4 pieces of flatbread
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes on each side until golden and cooked through.
  4. Remove chicken, let it rest for 5 minutes, then slice into thin strips.
  5. Lay out flatbreads on a baking sheet and spread basil pesto over each.
  6. Distribute sliced chicken over the pesto, sprinkle with mozzarella, and add halved cherry tomatoes.
  7. Top with grated Parmesan cheese.
  8. Bake for 10-12 minutes until cheese is melted and bubbly.
  9. Optionally, broil for 1-2 minutes for a crispy top.
  10. Let cool, then slice and garnish with fresh basil if desired.
