- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 cup confectioners’ sugar
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 2 large eggs
- 1/2 cup crushed peppermint candies or candy canes
- Additional crushed candies for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
- In a large mixing bowl, cream together the softened butter, white sugar, and confectioners’ sugar until smooth and creamy.
- Add the salt, vanilla extract, and peppermint extract, mixing until well combined.
- Beat in the eggs one at a time, mixing well after each addition.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until combined.
- Fold in the crushed peppermint candies or candy canes.
- Drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Optional: Sprinkle additional crushed candies on top of each cookie before baking.
- Bake in the preheated oven for 8 to 10 minutes, until the edges are lightly golden.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring to wire racks to cool completely.
