Description

These delightful Peppermint Sugar Cookies offer a soft, chewy texture paired with refreshing mint flavor, perfect for the holiday season.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 cup confectioners’ sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 2 large eggs
  • 1/2 cup crushed peppermint candies or candy canes
  • Additional crushed candies for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
  3. In a large mixing bowl, cream together the softened butter, white sugar, and confectioners’ sugar until smooth and creamy.
  4. Add the salt, vanilla extract, and peppermint extract, mixing until well combined.
  5. Beat in the eggs one at a time, mixing well after each addition.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until combined.
  7. Fold in the crushed peppermint candies or candy canes.
  8. Drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Optional: Sprinkle additional crushed candies on top of each cookie before baking.
  10. Bake in the preheated oven for 8 to 10 minutes, until the edges are lightly golden.
  11. Let the cookies cool on the baking sheet for about 5 minutes before transferring to wire racks to cool completely.
