Ingredients

- ½ teaspoon baking soda
- ¼ teaspoon sea salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- ½ tablespoon vanilla extract
- 1 large egg
- ½ cup crushed peppermints or candy canes
- ½ cup granulated sugar (for rolling)
Instructions
- Whisk the flour, baking soda, and salt together in a small bowl until evenly mixed.
- Beat the softened butter and granulated sugar together until pale and fluffy, about 2–3 minutes.
- Mix in the egg and vanilla extract until fully blended and smooth.
- Add the dry ingredients and mix on low speed until the dough comes together.
- Gently fold in the crushed peppermints until evenly distributed.
- Cover the dough and refrigerate for 30 minutes.
- Scoop tablespoon-sized portions, roll into balls, and coat each one in granulated sugar.
- Place dough balls on a lined baking sheet and bake at 350°F until edges are set and centers remain soft.
- Let cookies rest on the baking sheet for 5–10 minutes, then transfer to a wire rack to cool completely.

Store in an airtight container at room temperature for up to one week, or freeze for up to three months.
