Description

Ingredients

  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ½ tablespoon vanilla extract
  • 1 large egg
  • ½ cup crushed peppermints or candy canes
  • ½ cup granulated sugar (for rolling)

Instructions

  1. Whisk the flour, baking soda, and salt together in a small bowl until evenly mixed.
  2. Beat the softened butter and granulated sugar together until pale and fluffy, about 2–3 minutes.
  3. Mix in the egg and vanilla extract until fully blended and smooth.
  4. Add the dry ingredients and mix on low speed until the dough comes together.
  5. Gently fold in the crushed peppermints until evenly distributed.
  6. Cover the dough and refrigerate for 30 minutes.
  7. Scoop tablespoon-sized portions, roll into balls, and coat each one in granulated sugar.
  8. Place dough balls on a lined baking sheet and bake at 350°F until edges are set and centers remain soft.
  9. Let cookies rest on the baking sheet for 5–10 minutes, then transfer to a wire rack to cool completely.
