Description

Homemade peppermint marshmallows that are fluffy, sweet, and perfect for holiday gatherings or cozy evenings.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 2 large egg whites
  • 1/4 cup powdered sugar
  • 1 teaspoon peppermint extract
  • 1/4 teaspoon green food coloring (optional)
  • 1/2 cup crushed peppermint candies (for sprinkling)

Instructions

  1. Prepare the syrup: In a saucepan, combine the granulated sugar, light corn syrup, salt, and water. Cook over medium heat until the sugar dissolves completely, then continue cooking until it reaches the soft-ball stage (about 240°F).
  2. Beat the egg whites: In a mixing bowl, beat the egg whites until they form stiff peaks.
  3. Combine syrup and egg whites: Slowly pour the hot syrup into the beaten egg whites while mixing on low speed to prevent splattering.
  4. Add flavoring and color: Once fully incorporated, add the peppermint extract and green food coloring if desired. Mix on medium speed until thick and fluffy.
  5. Set the mixture: Prepare a greased 9×9 inch pan and pour the mixture into it, spreading evenly. Let it sit at room temperature for 4 hours or until fully set.
  6. Dust and sprinkle: Once set, dust the top with powdered sugar and sprinkle crushed peppermint candies on top.
  7. Cut and serve: Use a sharp knife to cut the marshmallows into squares and serve.

Notes

Marshmallows are best enjoyed fresh, ideally within 1-2 weeks. Store in an airtight container to maintain freshness.
