Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or silicone baking mats.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the vanilla and peppermint extracts, then add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix just until combined.
- Fold in the chocolate chips, dark chocolate, and crushed peppermint candies.
- Scoop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly browned and centers are just set.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
