Description

Delightful cookies that combine rich chocolate with refreshing peppermint, perfect for holidays or whenever you want a sweet treat.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon peppermint extract
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped dark chocolate or chocolate chunks
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or silicone baking mats.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the vanilla and peppermint extracts, then add the eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients and mix just until combined.
  7. Fold in the chocolate chips, dark chocolate, and crushed peppermint candies.
  8. Scoop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
  9. Bake for 10-12 minutes, or until the edges are lightly browned and centers are just set.
  10. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a festive twist, consider substituting semi-sweet chocolate with white chocolate or adding nuts for crunch.
