Description

A delicious and easy dessert that combines the flavors of classic pecan pie with a buttery cake layer.


Ingredients

  • 1.5 cups chopped pecans (toasted if desired)
  • 1 cup packed brown sugar
  • 0.5 cup light corn syrup
  • 3 large eggs (lightly beaten)
  • 0.5 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 box (15.25 oz) yellow cake mix (do not prepare the mix)
  • 0.75 cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Combine the chopped pecans, brown sugar, corn syrup, eggs, 0.5 cup melted butter, and vanilla extract in a medium bowl.
  3. Pour the pecan pie mixture into the prepared baking dish and spread it into an even layer.
  4. Sprinkle the dry yellow cake mix evenly over the top of the pecan filling. Do not stir.
  5. Drizzle the remaining 0.75 cup melted butter over the dry cake mix.
  6. Bake for 45-55 minutes, until the topping is golden brown and the filling is bubbly and set.
  7. Let the cake cool for at least 15 minutes before serving.

Notes

Serve warm with vanilla ice cream for an extra special treat.
