Description

Delicious Pecan Pie Cheesecake Bars combine creamy cheesecake filling with a crunchy pecan topping, perfect for any gathering.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup pecans, chopped
  • ½ cup brown sugar
  • ¼ cup corn syrup
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
  3. Press the mixture firmly into the bottom of a greased 9×13 inch baking dish.
  4. Bake the crust for 10 minutes or until it’s lightly golden. Let it cool.
  5. In a separate bowl, beat the softened cream cheese and granulated sugar until smooth.
  6. Add the eggs one by one, mixing well after each addition. Stir in the vanilla extract.
  7. Pour the cheesecake filling over the cooled crust and spread evenly with a spatula.
  8. In a saucepan, mix the chopped pecans, brown sugar, corn syrup, butter, and vanilla extract. Cook over medium heat until bubbling, about 3-4 minutes.
  9. Carefully pour the pecan mixture over the cheesecake layer, spreading gently to cover.
  10. Bake for an additional 25-30 minutes, or until the edges are set and the middle has a slight jiggle.
  11. Let the bars cool completely before slicing into squares.
