- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup pecans, chopped
- ½ cup brown sugar
- ¼ cup corn syrup
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
- Press the mixture firmly into the bottom of a greased 9×13 inch baking dish.
- Bake the crust for 10 minutes or until it’s lightly golden. Let it cool.
- In a separate bowl, beat the softened cream cheese and granulated sugar until smooth.
- Add the eggs one by one, mixing well after each addition. Stir in the vanilla extract.
- Pour the cheesecake filling over the cooled crust and spread evenly with a spatula.
- In a saucepan, mix the chopped pecans, brown sugar, corn syrup, butter, and vanilla extract. Cook over medium heat until bubbling, about 3-4 minutes.
- Carefully pour the pecan mixture over the cheesecake layer, spreading gently to cover.
- Bake for an additional 25-30 minutes, or until the edges are set and the middle has a slight jiggle.
- Let the bars cool completely before slicing into squares.
