- 1 package of mini phyllo pastry shells
- 1 cup pecans, chopped
- 1/2 cup brown sugar
- 1/4 cup unsalted butter, melted
- 1/4 cup corn syrup
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine melted butter, brown sugar, corn syrup, eggs, and vanilla extract. Stir until well mixed.
- Add in the chopped pecans and mix to combine.
- Place the mini phyllo pastry shells on a baking sheet.
- Fill each pastry shell with the pecan filling, about 3/4 full.
- Bake in the preheated oven for 15-20 minutes, or until the filling is bubbly and the pastry is golden brown.
- Allow to cool slightly before serving.
Notes
Avoid overfilling the pastry shells and keep an eye on the baking time to prevent burning.
