- ½ cup unsalted butter, melted
- â…“ cup peanut butter, heaping
- 1 large egg
- 1 cup light brown sugar, packed
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon salt
- 1 cup semi-sweet chocolate chips
- 2 tablespoons chocolate chips, for topping
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with foil or parchment, leaving an overhang for easy lifting.
- Melt the butter in a large mixing bowl and let it cool slightly.
- Whisk together the peanut butter, brown sugar, egg, and vanilla into the melted butter until smooth.
- Sprinkle flour and salt over the mixture and stir gently until no dry streaks remain.
- Fold in 1 cup of chocolate chips.
- Spread the batter evenly in the prepared pan and smooth the top. Sprinkle remaining chocolate chips on top.
- Bake for 20-25 minutes, until edges are set and the center is slightly soft.
- Allow cooling in the pan for at least 30 minutes before lifting out, slicing into squares, and serving.
Notes
To store, keep in an airtight container at room temperature for 3-4 days. Refrigerate for up to a week or freeze for up to 3 months.
