Deliciously chewy cookies filled with peanut butter, caramel, and drizzled with chocolate.

- 2 cups old-fashioned oats
- 1 cup creamy or chunky peanut butter
- 4 tablespoons unsalted butter
- ½ cup brown sugar
- ¼ cup whole milk
- 1 teaspoon vanilla extract
- 1 cup store-bought or homemade caramel sauce
- 1 cup chocolate chips, melted
- Sea salt, optional, for garnish
Instructions
- Combine butter, brown sugar, and milk in a medium saucepan over medium heat. Stir gently until the butter melts and the mixture starts to bubble.
- Remove from heat and mix in peanut butter and vanilla extract until smooth. Gradually add oats, stirring until evenly coated.
- Using a tablespoon, portion the oat mixture onto a parchment-lined tray. Flatten each slightly and create a small indentation in the center.
- Spoon about a teaspoon of caramel sauce into each cookie’s indentation.
- Melt chocolate chips in the microwave in 20-second bursts, stirring until smooth. Drizzle over the cookies.
- Refrigerate the cookies for at least 30 minutes to allow them to firm up.
Notes
Ensure to create a deep enough indentation for the caramel. Don’t skip the chilling step for the best texture.
