- 8 oz cream cheese, softened
- 1/2 cup creamy peanut butter
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1–2 tbsp heavy cream or milk (optional)
- 1 cup powdered sugar (for glaze)
- 2–3 tbsp milk or water (for glaze)
- 1/2 tsp vanilla extract (for glaze)
- 1/4 cup chopped peanuts (optional)
- Melted peanut butter for drizzle (optional)
Instructions
- Prepare the yeast: If using active dry yeast, dissolve it in warm milk with a pinch of sugar. Let it bloom until foamy, about 5 minutes.
- Mix dry ingredients: In a mixing bowl, whisk together flour, sugar, and salt.
- Combine wet ingredients: In a separate bowl, beat the egg with softened butter and vanilla extract until combined.
- Combine mixtures: Add the yeast mixture and wet ingredients to the dry mix. Knead the dough until smooth and elastic, about 8 minutes by hand or 5 minutes using a mixer.
- Let the dough rise: Cover the dough and let it rise in a warm place until it doubles in size, approximately 1 to 1.5 hours.
- Shape the donuts: Roll the dough out on a floured surface to about 1/3-inch thickness. Cut out donuts using a donut cutter.
- Rest the donuts: Arrange cut donuts on a baking sheet and let them rest for 20 minutes.
- Bake: Preheat the oven to 350°F. Bake for 10-12 minutes.
- Prepare the filling: Beat together cream cheese and peanut butter until smooth. Gradually incorporate powdered sugar and vanilla extract.
- Fill the donuts: After cooling, use a piping bag to fill each donut with the cheesecake-peanut butter mixture.
- Make the glaze: Combine powdered sugar, milk or water, and vanilla extract until smooth.
- Glaze the donuts: Dip the tops of filled donuts in the glaze and sprinkle with chopped peanuts or drizzle melted peanut butter.
- Serve: Allow donuts to set for a few minutes before serving.
Notes
For best flavor and texture, serve the donuts fresh the day they are made. They can be stored in an airtight container for 1-2 days or frozen for up to three months.
