Description

Delicious baked donuts combining rich peanut butter and creamy cheesecake flavors, perfect for breakfast or as a sweet snack.

Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 tsp instant yeast (or active dry yeast)
  • 1/2 tsp salt
  • 3/4 cup warm milk (110°F)
  • 2 tbsp unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 12 tbsp heavy cream or milk (optional)
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp milk or water (for glaze)
  • 1/2 tsp vanilla extract (for glaze)
  • 1/4 cup chopped peanuts (optional)
  • Melted peanut butter for drizzle (optional)

Instructions

  1. Prepare the yeast: If using active dry yeast, dissolve it in warm milk with a pinch of sugar. Let it bloom until foamy, about 5 minutes.
  2. Mix dry ingredients: In a mixing bowl, whisk together flour, sugar, and salt.
  3. Combine wet ingredients: In a separate bowl, beat the egg with softened butter and vanilla extract until combined.
  4. Combine mixtures: Add the yeast mixture and wet ingredients to the dry mix. Knead the dough until smooth and elastic, about 8 minutes by hand or 5 minutes using a mixer.
  5. Let the dough rise: Cover the dough and let it rise in a warm place until it doubles in size, approximately 1 to 1.5 hours.
  6. Shape the donuts: Roll the dough out on a floured surface to about 1/3-inch thickness. Cut out donuts using a donut cutter.
  7. Rest the donuts: Arrange cut donuts on a baking sheet and let them rest for 20 minutes.
  8. Bake: Preheat the oven to 350°F. Bake for 10-12 minutes.
  9. Prepare the filling: Beat together cream cheese and peanut butter until smooth. Gradually incorporate powdered sugar and vanilla extract.
  10. Fill the donuts: After cooling, use a piping bag to fill each donut with the cheesecake-peanut butter mixture.
  11. Make the glaze: Combine powdered sugar, milk or water, and vanilla extract until smooth.
  12. Glaze the donuts: Dip the tops of filled donuts in the glaze and sprinkle with chopped peanuts or drizzle melted peanut butter.
  13. Serve: Allow donuts to set for a few minutes before serving.

Notes

For best flavor and texture, serve the donuts fresh the day they are made. They can be stored in an airtight container for 1-2 days or frozen for up to three months.
