- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups fresh peaches, peeled and sliced
- 1 teaspoon ground cinnamon
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1/2 cup oats
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter in a mixing bowl. Press the mixture into the bottom of a springform pan to form the crust.
- Beat the cream cheese until smooth in a separate bowl. Add sugar and vanilla extract, mixing until well combined. Add eggs one at a time, mixing until smooth.
- Pour half of the cheesecake filling over the crust.
- Combine sliced peaches with cinnamon and a sprinkle of sugar, then layer over the cheesecake filling.
- Pour the remaining cheesecake filling over the peaches.
- Combine brown sugar, flour, and oats for the crumble topping in a small bowl. Sprinkle over the cheesecake.
- Bake in the preheated oven for about 50-60 minutes or until edges are set.
- Allow to cool before refrigerating for at least 4 hours.
- Serve chilled and enjoy!
Notes
Serve with vanilla ice cream or whipped cream for an extra treat.
