Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup peach puree or fresh peaches, diced
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a medium bowl.
  3. Press this mixture into the bottom of the prepared baking dish to create a solid crust.
  4. Beat the softened cream cheese in a large bowl until smooth and creamy using a mixer.
  5. Gradually add 1 cup of sugar, mixing until incorporated.
  6. Add the eggs and vanilla extract to the cream cheese mixture and mix until smooth.
  7. Pour the cheesecake mixture over the crust in your baking dish, spreading evenly.
  8. Mix the peach puree or diced peaches with the flour, cinnamon, and brown sugar in another bowl.
  9. Spoon this peach mixture over the cheesecake layer, spreading it out gently.
  10. Bake in the preheated oven for 35-40 minutes or until the cheesecake is set in the middle.
  11. Remove from the oven, allow to cool, and refrigerate for at least 4 hours before cutting into bars.

Notes

Store these bars in an airtight container in the refrigerator for 5-7 days. They can be frozen for 2-3 months. Thaw in the refrigerator when ready to enjoy.
