Delightful Peach Cheesecake Cobbler combining creamy cheesecake with sweet peaches on a graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 cups fresh peaches, peeled and sliced
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup rolled oats
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs and melted butter until combined. Press this mixture into the bottom of the prepared pan to form the crust.
- In a large mixing bowl, beat the cream cheese, sugar, and vanilla until smooth. Add the eggs one at a time, mixing until just combined.
- Layer the sliced peaches on top of the crust, then pour the cream cheese mixture over the peaches.
- In another bowl, combine brown sugar, cinnamon, flour, baking powder, and oats. Sprinkle this mixture over the cream cheese layer.
- Bake for 50-60 minutes, or until the cheesecake is set and the top is golden brown.
- Let it cool in the pan before serving. Enjoy your rich summer dessert!
Notes
Serve with vanilla ice cream or caramel sauce for added flavor. Store leftovers in the refrigerator for 3-4 days.
