- 3 small zucchinis
- 2 eggs
- 1 pinch salt
- Ground black pepper
- 2 cups Japanese panko bread crumbs
- 1/2 cup grated parmesan cheese
- Ranch dressing
Instructions
- Preheat the oven to 425°F (218°C).
- Slice the zucchinis into lengths of about 3 inches (7 cm) and cut them into strips that are 1/2 inch (1 cm) thick.
- Beat the eggs in a bowl and mix in a pinch of salt and ground black pepper.
- Line a baking sheet with parchment paper.
- Combine the panko and parmesan cheese on a plate.
- Dip each zucchini strip into the beaten eggs, shaking off excess egg mixture.
- Roll the zucchini in the panko mixture, pressing gently to coat thoroughly.
- Transfer the coated zucchini fries to the prepared baking sheet.
- Bake for about 20 to 25 minutes, turning halfway through, until golden brown and crispy.
- Serve immediately with ranch dressing.
Notes
For extra flavor, add spices like garlic powder or Italian herbs to the panko mixture.
