Description

Crispy Parmesan Zucchini Fries coated in panko and parmesan, perfect for a healthy snack or side dish.


Ingredients

  • 3 small zucchinis
  • 2 eggs
  • 1 pinch salt
  • Ground black pepper
  • 2 cups Japanese panko bread crumbs
  • 1/2 cup grated parmesan cheese
  • Ranch dressing

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. Slice the zucchinis into lengths of about 3 inches (7 cm) and cut them into strips that are 1/2 inch (1 cm) thick.
  3. Beat the eggs in a bowl and mix in a pinch of salt and ground black pepper.
  4. Line a baking sheet with parchment paper.
  5. Combine the panko and parmesan cheese on a plate.
  6. Dip each zucchini strip into the beaten eggs, shaking off excess egg mixture.
  7. Roll the zucchini in the panko mixture, pressing gently to coat thoroughly.
  8. Transfer the coated zucchini fries to the prepared baking sheet.
  9. Bake for about 20 to 25 minutes, turning halfway through, until golden brown and crispy.
  10. Serve immediately with ranch dressing.

Notes
