- 8 large eggs
- 1 cup milk
- 1 cup sour cream
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 pound breakfast sausage
- 30 oz frozen hash browns, thawed
- 2 cups shredded cheddar cheese
- ¼ cup chopped green onions
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the eggs, milk, sour cream, salt, and pepper until well combined.
- In a skillet, cook the breakfast sausage over medium heat until browned and cooked through, about 5-7 minutes. Drain any excess fat.
- In a greased 9×13 inch baking dish, layer the thawed hash browns evenly across the bottom.
- Pour the egg mixture over the hash browns, covering them completely.
- Add the cooked sausage on top of the egg and hash browns.
- Sprinkle the cheddar cheese and green onions over the casserole.
- Cover with foil and refrigerate overnight.
- In the morning, remove the foil and bake for 45-55 minutes or until set and lightly golden on top.
- Let cool for a few minutes before slicing and serving.
Notes
Thaw the hash browns completely for even baking. Let the casserole cool slightly before slicing.
