Description

A hearty and delicious breakfast casserole that you prepare the night before for a warm, satisfying start to your day.


Ingredients

  • 8 large eggs
  • 1 cup milk
  • 1 cup sour cream
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound breakfast sausage
  • 30 oz frozen hash browns, thawed
  • 2 cups shredded cheddar cheese
  • ¼ cup chopped green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, sour cream, salt, and pepper until well combined.
  3. In a skillet, cook the breakfast sausage over medium heat until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  4. In a greased 9×13 inch baking dish, layer the thawed hash browns evenly across the bottom.
  5. Pour the egg mixture over the hash browns, covering them completely.
  6. Add the cooked sausage on top of the egg and hash browns.
  7. Sprinkle the cheddar cheese and green onions over the casserole.
  8. Cover with foil and refrigerate overnight.
  9. In the morning, remove the foil and bake for 45-55 minutes or until set and lightly golden on top.
  10. Let cool for a few minutes before slicing and serving.

Notes

Thaw the hash browns completely for even baking. Let the casserole cool slightly before slicing.
