Description

Ingredients

  • 1 lb Smoked sausage, sliced
  • 3 large Potatoes, diced
  • 2 cups Mixed vegetables (e.g., bell peppers, onions)
  • 1 tsp Smoked paprika
  • 3 cloves Garlic, minced
  • 1 tsp Thyme
  • 1 cup White cheddar cheese, shredded
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine sliced smoked sausage, diced potatoes, and mixed vegetables.
  3. Drizzle with olive oil and sprinkle with smoked paprika, minced garlic, thyme, salt, and pepper. Toss until well coated.
  4. Spread the mixture in a single layer on a baking sheet.
  5. Roast in the preheated oven for about 25-30 minutes, or until potatoes are fork-tender.
  6. Remove from the oven and top with shredded white cheddar cheese.
  7. Return to the oven for an additional 5-10 minutes, until the cheese is melted.
  8. Serve warm and enjoy!
