- 1 lb Smoked sausage, sliced
- 3 large Potatoes, diced
- 2 cups Mixed vegetables (e.g., bell peppers, onions)
- 1 tsp Smoked paprika
- 3 cloves Garlic, minced
- 1 tsp Thyme
- 1 cup White cheddar cheese, shredded
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine sliced smoked sausage, diced potatoes, and mixed vegetables.
- Drizzle with olive oil and sprinkle with smoked paprika, minced garlic, thyme, salt, and pepper. Toss until well coated.
- Spread the mixture in a single layer on a baking sheet.
- Roast in the preheated oven for about 25-30 minutes, or until potatoes are fork-tender.
- Remove from the oven and top with shredded white cheddar cheese.
- Return to the oven for an additional 5-10 minutes, until the cheese is melted.
- Serve warm and enjoy!
