- 1 large green or red cabbage
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- Optional: grated Parmesan cheese, red pepper flakes, or fresh parsley
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Prepare the cabbage by removing loose outer leaves and slicing it into 1-inch thick rounds, keeping the core intact.
- In a small bowl, whisk together olive oil, garlic powder, smoked paprika, onion powder, dried thyme, salt, and black pepper. Brush both sides of each cabbage steak with the mixture.
- Place the seasoned cabbage steaks onto the prepared baking sheet and roast for 20-25 minutes, flipping halfway through.
- Check for tenderness with a fork and add optional toppings in the last few minutes of roasting, garnishing with parsley before serving.
