Description
A delightful cake combining a rich, buttery pound cake with the zesty and sweet essence of oranges.
Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- ½ cup fresh orange juice
- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh orange juice (for glaze)
- 1 teaspoon orange zest (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and orange zest.
- Gradually add the dry ingredients to the wet mixture, alternating with the fresh orange juice. Start and end with the flour mixture. Mix until just combined.
- Pour the batter into a greased 9×5 inch loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- For the glaze, whisk together the powdered sugar, orange juice, and zest until smooth. Drizzle over the cooled cake.
