Ingredients

  • 1 pound chicken breast, diced
  • 1 package gnocchi
  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the diced chicken and cook until browned and fully cooked. Season with salt, pepper, and garlic powder.
  2. Add the gnocchi to the skillet and pour in the chicken broth. Bring everything to a simmer and cook for 3-4 minutes.
  3. Stir in the cherry tomatoes and spinach, and cook until the spinach has wilted down.
  4. Pour in the heavy cream and stir everything together. Cook for an additional 2-3 minutes until everything is heated through.
  5. Taste and adjust seasoning if needed, then serve warm.

Notes

For additional flavors, consider adding red pepper flakes for a spicy kick or substituting chicken with shrimp or sausage.
