- 1 pound smoked sausage, sliced
- 1 cup rice
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon paprika
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, add the sliced smoked sausage and cook over medium heat until browned.
- Add the diced onion, bell pepper, and garlic; sauté until the vegetables are soft.
- Stir in the rice, chicken broth, diced tomatoes, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked through.
- Fluff the rice with a fork and garnish with chopped parsley before serving.
Notes
For best results, stick to the rice-to-liquid ratio and do not skip the paprika for flavor.
