Description

Ingredients

  • 1 pound smoked sausage, sliced
  • 1 cup rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large pot, add the sliced smoked sausage and cook over medium heat until browned.
  2. Add the diced onion, bell pepper, and garlic; sauté until the vegetables are soft.
  3. Stir in the rice, chicken broth, diced tomatoes, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is cooked through.
  5. Fluff the rice with a fork and garnish with chopped parsley before serving.

Notes

For best results, stick to the rice-to-liquid ratio and do not skip the paprika for flavor.
