- 14 ounces smoked sausage (like kielbasa), sliced into rounds
- 1/2 cup onion, diced
- 1 red bell pepper, diced
- 2 tablespoons olive oil
- 2 cups low-sodium chicken broth
- 1 cup long-grain white rice
- 3 tablespoons tomato paste
- 1/2 teaspoon paprika
- 1 teaspoon oregano
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Start by slicing the smoked sausage into rounds. Dice the onion and red bell pepper.
- In a large skillet, heat olive oil over medium heat. Add the sliced sausage. Cook until browned, about 5-7 minutes.
- Add the diced onion to the skillet and cook for an additional 3-4 minutes until soft and translucent.
- Stir in chicken broth, rice, tomato paste, and seasoning (paprika, oregano, garlic powder, salt, and black pepper). Add the red bell pepper.
- Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 20-23 minutes until rice is tender and liquid is absorbed.
- Garnish with chopped parsley or green onions if desired. Serve warm and enjoy!
Notes
To store leftovers, refrigerate in an airtight container for 3-4 days or freeze for 2-3 months. Reheat with a splash of water to moisten.
