Description

A quick and easy one-pot meal featuring smoked sausage, rice, and vegetables, perfect for busy weeknights.

Ingredients

Scale
  • 14 ounces smoked sausage, such as kielbasa, sliced into rounds
  • 1/2 cup onion, diced (about 1/2 medium onion)
  • 1 red bell pepper, diced
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika (smoked paprika for extra flavor)
  • 1 teaspoon oregano
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 cup long-grain white rice
  • 3 tablespoons tomato paste

Instructions

  1. Slice the kielbasa into rounds and dice the onion and bell pepper.
  2. In a small bowl, combine paprika, oregano, garlic powder, salt, and pepper.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sausage and brown it for about 3-4 minutes.
  4. Once the sausage is browned, add the onions. Cook until the onions have softened, about 3 minutes. Then, add the diced bell pepper and cook for an additional minute.
  5. Stir in the chicken broth, rice, tomato paste, and the seasoning mix. Mix well to combine all the ingredients.
  6. Bring the mixture to a boil over high heat.
  7. Once boiling, cover the skillet and reduce the heat to low. Let it simmer for 20-23 minutes, or until the rice is tender and has absorbed most of the liquid.
  8. Once done, remove from heat and let it sit for 5 minutes. Garnish with parsley or green onions before serving.

Notes

You can substitute smoked sausage with vegetarian sausage for a meatless option.
