Ingredients

  • 12 oz smoked sausage (kielbasa or your choice), sliced
  • 1 cup long-grain white rice
  • 1 medium onion, chopped
  • 1 cup bell peppers (any color), diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • Fresh parsley (optional), for garnish

Instructions

  1. Heat a large pot over medium heat. Add sliced smoked sausage and cook until browned, about 5-7 minutes.
  2. Stir in chopped onions and minced garlic; sauté until onions are translucent, about 3-4 minutes.
  3. Add diced bell peppers and cook for another 2-3 minutes until slightly softened.
  4. Pour in long-grain rice and chicken broth; stir to combine.
  5. Sprinkle Cajun seasoning over the mixture and stir again.
  6. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20-25 minutes until rice is fluffy and liquid is absorbed.

Notes

For a spicier kick, add chopped jalapeños or cayenne pepper. This dish is also customizable with different vegetables or sausages.
