Description

Ingredients

  • 1 pound smoked sausage, sliced
  • 1 cup rice (long-grain or basmati)
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add sliced sausage and cook until browned.
  3. Add onion, garlic, and bell pepper; sauté until softened.
  4. Stir in the rice, chicken broth, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Cook for about 20 minutes, or until rice is tender.
  7. Stir in frozen peas and cook for an additional 5 minutes.
  8. Fluff with a fork and serve hot.
