- 12 oz smoked sausage (kielbasa or your choice), sliced
- 1 cup long-grain white rice
- 1 medium onion, chopped
- 1 cup bell peppers (any color), diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tsp Cajun seasoning
- Fresh parsley (optional), for garnish
Instructions
- Heat a large pot over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes.
- Stir in the chopped onions and minced garlic; sauté until the onions are translucent, about 3-4 minutes.
- Add the diced bell peppers and cook for another 2-3 minutes until slightly softened.
- Pour in the long-grain rice and chicken broth; stir to combine.
- Sprinkle Cajun seasoning over the mixture and stir again.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 20-25 minutes until the rice is fluffy and the liquid is absorbed.
Notes
For added flavor, do not skip browning the sausage. You can also swap sausage for chicken or vegetarian options and add different vegetables as desired.
