Ingredients

Scale
  • 2 cups basmati rice
  • 1 lb chicken thighs, cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic and sauté until softened, about 2-3 minutes.

  4. Add the rice to the pot and stir to combine with the chicken and spices.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Fluff the rice with a fork and garnish with fresh parsley before serving.
