Description

A hearty and satisfying one-pot meal perfect for busy weeknights, featuring rotini pasta, ground beef, and melted mozzarella.


Ingredients

  • 12 oz rotini pasta
  • 1 lb ground beef
  • 1 can (28 oz) crushed tomatoes
  • 2 cups shredded mozzarella cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups beef broth or water
  • Olive oil for cooking

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the ground beef, breaking it up with a spoon. Cook until browned. If there’s excess fat, drain it off.
  3. Stir in the crushed tomatoes, Italian seasoning, salt, and pepper. Pour in the beef broth or water.
  4. Bring the mixture to a boil, then add the rotini pasta.
  5. Reduce the heat and simmer, stirring occasionally, until the pasta is cooked and has absorbed some of the liquid.
  6. Once the pasta is done, remove it from heat. Stir in the shredded mozzarella cheese until it is melted and gooey.
  7. Serve hot and enjoy your cozy one-pot meal!

Notes
