Ingredients

  • 1 can Rotel tomatoes
  • 1 cup nacho cheese sauce
  • 2 cups chicken broth
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste

Instructions

  1. Add diced chicken and season with taco seasoning, salt, and pepper. Cook until the chicken is browned.
  2. Add the rice, Rotel tomatoes, nacho cheese sauce, and chicken broth to the pot. Stir to combine.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  4. Fluff with a fork and garnish with chopped cilantro before serving.
