Instructions
- Add diced chicken and season with taco seasoning, salt, and pepper. Cook until the chicken is browned.
- Add the rice, Rotel tomatoes, nacho cheese sauce, and chicken broth to the pot. Stir to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- Fluff with a fork and garnish with chopped cilantro before serving.
