Description

A flavorful and nutritious one-pot meal combining Moroccan spices, chickpeas, and fluffy couscous, perfect for a quick weeknight dinner.


Ingredients

  • 1 tablespoon olive oil (or vegetable broth)
  • 1 medium red onion (diced)
  • 1 large bell pepper (diced)
  • 1 medium carrot (diced)
  • 2 large garlic cloves (minced)
  • 3/4 teaspoon paprika
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper (to taste)
  • 15 ounces chickpeas (canned, drained and rinsed)
  • 5 Peppadew piquanté peppers (chopped, or 1/4 cup golden raisins)
  • 1 cup Moroccan couscous
  • 1 1/2 cups vegetable broth
  • 1/2 cup chopped parsley (plus more for garnish)
  • 1 small lemon (zest and juice, or to taste)
  • 2 small avocados (chopped)
  • Vegan sour cream

Instructions

  1. Heat the oil in a medium-large skillet over medium heat. Add the red onion, bell pepper, and carrot. Cook for about 5 minutes or until the veggies are just tender. Add the minced garlic and cook for 30 seconds more.
  2. Add the paprika, ground cumin, ground coriander, turmeric, cinnamon, cayenne pepper, salt, and black pepper. Cook for 1 minute more. Stir well to combine the spices with the veggies.
  3. Mix in the chopped Peppadew peppers and the drained chickpeas. Allow to cook for 1 minute, stirring occasionally.
  4. Pour in the vegetable broth. Bring it to a simmer, cooking for about 1 minute. Once simmering, turn off the heat. Add the Moroccan couscous and chopped parsley. Stir until everything is mixed well. Flatten the top gently with a spoon so the couscous is submerged in the liquid. Let it sit for about 5 minutes or until the broth is fully absorbed.
  5. Use a microplane grater to zest the lemon onto the couscous. Add the lemon juice along with salt and black pepper to taste. Fluff everything with a fork.
  6. Serve warm with vegan sour cream and chopped avocado as desired.

Notes

Allowing the couscous to sit covered for 5 minutes after cooking is crucial for achieving the perfect texture. Adjust spices to your taste.
