Ingredients

  • 1 lb gnocchi
  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup celery, diced
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery and sauté for about 5-7 minutes until softened.
  2. Stir in the cooked chicken, garlic powder, thyme, salt, and pepper, mixing well.
  3. Add the chicken broth and bring the mixture to a boil.
  4. Once boiling, stir in the gnocchi and cook according to package directions until tender.
  5. Reduce the heat and stir in the heavy cream and peas, letting everything simmer for a few minutes until heated through.
  6. Garnish with fresh parsley before serving.
