Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage (like kielbasa), sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups orzo pasta
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  2. Add the sliced sausage to the pot and cook until browned. Remove and set aside.
  3. In the same pot, add chopped onion and cook for about 5 minutes or until softened.
  4. Stir in the minced garlic and cook for 1 more minute.
  5. Add orzo pasta and stir well to coat with the flavorful drippings.
  6. Pour chicken broth into the pot and bring to a boil.
  7. Once boiling, reduce heat to low, cover, and let simmer for 10-12 minutes until orzo is al dente.
  8. Stir in heavy cream, Parmesan cheese, and cooked sausage. Mix well.
  9. Cook for another 2-3 minutes until the sauce thickens and the sausage is heated through.
  10. Stir in parsley and season with salt and pepper. Serve hot and enjoy!
