- 1 tablespoon olive oil
- 1 pound smoked sausage (like kielbasa), sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 1/2 cups orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Add the sliced sausage to the pot and cook until browned. Remove and set aside.
- In the same pot, add chopped onion and cook for about 5 minutes or until softened.
- Stir in the minced garlic and cook for 1 more minute.
- Add orzo pasta and stir well to coat with the flavorful drippings.
- Pour chicken broth into the pot and bring to a boil.
- Once boiling, reduce heat to low, cover, and let simmer for 10-12 minutes until orzo is al dente.
- Stir in heavy cream, Parmesan cheese, and cooked sausage. Mix well.
- Cook for another 2-3 minutes until the sauce thickens and the sausage is heated through.
- Stir in parsley and season with salt and pepper. Serve hot and enjoy!
