- 1 tablespoon olive oil
- 1 pound smoked sausage (like kielbasa), sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 1/2 cups orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add the sliced sausage and cook until browned on both sides. Remove the sausage from the pot and set aside.
- Add the chopped onion to the pot. Cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 more minute until fragrant.
- Add the orzo pasta to the pot and stir to coat with the drippings.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed.
- Stir in the heavy cream, Parmesan cheese, and cooked sausage.
- Cook for another 2-3 minutes, stirring, until the sauce has thickened and the sausage is heated through.
- Stir in the fresh parsley. Season with salt and pepper to taste.
- Serve hot!
