Description

A simple and flavorful one-pot meal featuring sausage, rice, and vegetables, seasoned with Cajun spices.


Ingredients

  • 1 lb sausage
  • 1 cup long-grain rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot over medium heat, cook the sausage until browned.
  2. Add the diced onion, bell pepper, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the rice, chicken broth, Cajun seasoning, salt, and pepper. Stir to mix well.
  5. Bring the mixture to a boil, then reduce the heat to low.
  6. Cover and let it simmer for 20-25 minutes, until the rice is cooked and has absorbed all the liquid.
  7. Fluff the rice with a fork and garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for 2-3 months. Reheat with a splash of chicken broth.
