A simple and flavorful one-pot meal featuring sausage, rice, and vegetables, seasoned with Cajun spices.

- 1 lb sausage
- 1 cup long-grain rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 teaspoons Cajun seasoning
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot over medium heat, cook the sausage until browned.
- Add the diced onion, bell pepper, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the rice, chicken broth, Cajun seasoning, salt, and pepper. Stir to mix well.
- Bring the mixture to a boil, then reduce the heat to low.
- Cover and let it simmer for 20-25 minutes, until the rice is cooked and has absorbed all the liquid.
- Fluff the rice with a fork and garnish with chopped green onions before serving.
Notes
Store leftovers in an airtight container in the fridge for 3-4 days, or freeze for 2-3 months. Reheat with a splash of chicken broth.
